    Why this tasting

Five ways to eat an oyster, told by the chef who grew up with them

In La Paz the sea is not only fished: it is farmed. Oysters grow in the clean waters of the Gulf of California, in farms run by families who know every bay by name. This tasting is where that story sits down at the table.

Chef Héctor Palacios, the chef behind Casamarte Oyster Bar & Grill and a name in the Guía México Gastronómico 2026, walks you through five oyster dishes, each one a different way of understanding the same ingredient: raw and cured in citrus, on a handmade corn sope, folded into a Baja-style flour tortilla taco, finished over open flame, and closed with a silky oyster-scallop panna cotta. One drink is included to pair with the menu.

It is a conversation as much as a meal. With a maximum of ten guests, the chef has time to explain where each oyster was grown, who grew it and why it tastes the way it does. You leave knowing the territory, not just the dish.

Casamarte is in downtown La Paz, a short walk from the Malecón. If you would rather not drive, add round-trip private transportation from your hotel when you book: $600 MXN per group, up to 10 guests. The only other thing you plan is the time: any start between noon and 3 pm.
