**In La Paz, Baja California Sur, “where to eat” has an answer you won’t find anywhere else in Mexico: here, the sea isn’t just fished — it’s sown.** We’re La Paz City Map, locals in La Paz, and we work with Chef Héctor Palacios — of Casamarte, recognized in the 2026 Guía México Gastronómico — to bring you to a table where every oyster carries a family’s name and every fish comes with proof of where it’s from.

## The oyster raised like a baby

In López Mateos, on the Gulf of California, the Aragón family grows oysters for the Yemaya cooperative. It arrives as a tiny seed, and that’s where the work begins: the family cleans it, moves it from trays into mesh bags, and tends it — in Chef Héctor Palacios’s words — “like it’s a baby,” for 12 to 14 months, until it reaches size. Every batch travels with a cold chain and a record card: which oyster, where it came from, when it was harvested — so it arrives at Casamarte with a name, not as “just an oyster.”

For the chef, that’s the heart of his cooking: “[eating is eating a story](https://chefhectorpalacios.com).” He doesn’t serve an oyster — he tells you where it came from, who raised it, and why that matters for keeping the Gulf of California the cleanest sea in Mexico.

## King Kampachi: the King of the Gulf of California

The other star of this table is King Kampachi (*Seriola rivoliana*), brought into responsible aquaculture by Omega Azul. The chef calls it “the King of the Gulf of California” and insists on the scientific name, because many species look alike and traceability starts with knowing exactly what you’re eating. His signature dish is campachi a las brasas: aged, grilled whole “the way they do it on the ranches,” served with nothing wasted — relaxed cooking, the kind you eat as a taco, with the quality already settled at the source.

At Casamarte, every oyster and every cut of kampachi arrives with a producer’s name and full traceability from the Gulf of California.

## From seed to plate: the journey of a La Paz oyster

1. **The seed.** Arrives tiny at the Yemaya cooperative’s farm in López Mateos.
2. **The care.** The Aragón family cleans it and moves it from trays into mesh bags — tending it, literally, like it’s a baby.
3. **The 12 to 14 months.** The time it takes to reach size, always inside the Gulf of California.
4. **The travel record.** Every batch leaves with a cold chain and a log: which oyster, where from, when harvested.
5. **The table.** Arrives at Casamarte with its own name, ready to tell its story.

## We are ranchers of the sea

Baja California Sur isn’t just sea — it’s sea and sierra. Minutes from the coast there are ranches with cheeses like Santanita, San Pedro and Miraflores, machacas, chorizos and cooking techniques learned slow, over a rancher’s fire. Chef Palacios sums it up: “we are ranchers of the sea” — surrounded by ocean, but also by hats, horses and mountains. In the Sierra la Giganta, between La Soledad and Las Pocitas, that rural cooking shows up as beans with dried tripe and goat menudo; on Casamarte’s table, it becomes dishes like arroz ranchero, ranch techniques applied to seafood.

It’s a double identity that neither Los Cabos nor Valle de Guadalupe can claim: here, the cleanest sea in Mexico sits, a few kilometers away, next to the sierra that makes the cheese and the machaca. “La Paz deserves to be a gastronomic landmark because we care about origin. That, basically, is who we are,” says the chef.

## Why the Gulf of California is the cleanest sea in Mexico

It’s not a slogan — it’s backed up. The Gulf of California and its islands —Espíritu Santo, the most species-diverse marine aquarium in the Gulf— sit under environmental protection, and fishing communities across the northwest actively work to keep beaches clean and closed seasons respected. Farming before extracting, and always naming the origin, is how Casamarte and its producers keep that reputation earned.
